  • 1 package Dream Whip® whipped topping mix*
  • ½ cup OPTIFAST® 800 Ready to Drink (RTD) - Chocolate or Strawberry

Directions:
Prepare according to directions on Dream Whip package, using OPTIFAST 800 RTD in place of milk. Once prepared, divide among four dessert dishes and chill until ready to serve. Cover any leftover servings and keep refrigerated for up to 3 days.

Strawberry Mousse

  • Ingredients:
  • 4 oz OPTIFAST® 800 Vanilla
  • 1 package whipped topping mix (such as Dream Whip®*)
  • ½ tsp strawberry extract
  • 2 oz fat-free cream cheese, softened
  • ¼ tsp strawberry extract
  • 2 Tbsp boiling water
  • 1 tsp sugar free gelatin mix, strawberry flavor
  • 2 Tbsp cold water
  • ½ cup sliced fresh strawberries

Directions:
Mix OPTIFAST Vanilla, whipped topping mix and strawberry extract in a large bowl with an electric mixer on low speed until blended. Scrape down sides of bowl and continue beating on high speed for 3-4 minutes or until topping thickens and forms peaks. Refrigerate until needed.

Beat cream cheese and strawberry extract in a large bowl with an electric mixer until well blended. Stir boiling water and gelatin mix together in small bowl for 1-2 minutes or until completely dissolved. Add cold water and stir well. Gradually add the gelatin mixture to the cream cheese, beating well after each addition.

Gently stir in the whipped topping mixture and sliced strawberries. Portion into individual dessert dishes, cover and refrigerate at least 1 hour before serving.

Makes approximately four ½-cup portions.

Yes, chew your food!

An abstract presented at the 2011 European Association for the Study of Diabetes suggests that thorough chewing stimulates the release of two intestinal peptides that reduce appetite and food intake in obese individuals.  In a study of obese non-diabetic individuals, thorough chewing stimulated postprandial increases of plasma glucagon-like peptide (GLP)-1 and peptide YY (PYY), both of which are secreted by intestinal L cells.

It was reported that the postprandial plasma levels of both hormones were statistically significantly higher after chewing 30 times than after chewing 5. This suggests that thorough chewing of food might have a clinically meaningful effect in controlling body weight in obese individuals. 

Once again, mom was right.  Slow down, don’t talk with your mouth full and chew your food before you swallow….
